Every kid loves it, every Mom gets stuck cleaning bits of it out of the carpet. My daughter could play with the stuff for hours, and her new favorite thing is to make lots of different sized "snakes" out of it. Her introduction to this childhood staple started as an impulse buy I made from Toys'R'Us. The original few containers I bought have now gotten slightly dried out, and the colors have all been blended together by the creative mind of my toddler and her partner-in-crime, aka Daddy. That is, whatever hasn't been smashed into the carpet or eaten by the dogs. In other words, we could use some new dough. I remembered that Mommypotamus had posted a great blog on DIY play-doh, and I had a lone beet in the fridge that never made it to my beet brownies, so the timing was perfect. I used her recipe and it turned out AWESOME!<br />

I almost used my beloved sea salt until I remembered I had Morton's
salt (containing GMO corn, a fact which I was only recently made aware
of) so used that instead. This was also a great way to use up the
all-purpose flour I bought before making the switch to gluten-free

Boil your sliced beets in 2 cups of filtered water for about 15 minutes. Drain the beets and save the colored water which should measure 1 cup. I was able to throw the cooked beets onto a salad for lunch. Win win!<br />

It will get a little gloppy after all the water is added, but keep stirring. After it seems mostly blended, put the pot over med-low heat. Continue stirring until it starts pulling away from the sides and forms a ball. </div>

I have always been a lover of pickles and sauerkraut (I am a polish
girl, after all) and have been hearing recently how we should be trying to incorporate more fermented foods into our diets for optimal gut health. Besides being an avid canner of pickled veggies,
I wanted to try fermenting some cucumbers with<i>out</i> my water bath canner to
get the maximum health benefits. I used distilled water versus filered because I am hoping to ward off any mold that might form on the top. I know it's harmless, but yuck.<br />

the Park District, (<i>Oh, he's just getting upset because he's so
independent</i>...<i>u<span style="font-size: small;">m</span>m he's throwing a fit because class is over and he'd rather continue playing</i>) & being around certain families in my
salon (<i>Go on, tell Liz about how you totally blew it on the last
hole...OMG he's golfing 18 holes at barely a decade old, cut the kid some slack!</i>) I've been
reflecting on how as parents, we tend to think our kids are the
smartest, sweetest, most adorable, most gifted children to ever grace
the earth...<span style="font-size: small;">t</span>hey can do no wrong, & we find ourselves making excuses
for their completely normal behavior, putting them up on pedestals they
can't possible be ready to stand on (especially two & three year
olds)! Sadly, it seems too much pressure can spiral into a situation like my
client<span style="font-size: small;"> and his son</span>, resulting in a<span style="font-size: small;">n extreme</span> <span style="font-size: small;">forecast</span> of greatness
on such tiny shoulders. We end up expecting a lot, and only because
we love them SO much...and maybe we believe they can do the things we
didn't. Have the opportunities we didn't get, become the star athlete, valedictorian, or prom queen we weren't. It
might be hard to admit, but it happens all too easily. The <span style="font-size: small;">most importa<span style="font-size: small;">nt</span></span> thing I
want my daughter to know is that my love for her isn't based on how
beautiful she is, how well she does athletically, or how quickly she
learns her ABC's. I don't love her because she's more intelligent than
her peers, or because she's the best pianist in music class. Even if she
isn't any of those things, I couldn't be any prouder of who she is
becoming & I don't love her for any other reason than simply because
she is Charlotte, my <span style="font-size: small;">sassy sti<span style="font-size: small;">nker</span></span>, with all her two-year old naughtiness, quirks
& curious innocence<span style="font-size: small;">. T</span>he joy in her giggles & the sweetness in
her many hugs makes her my beloved child. She may <span style="font-size: small;">turn out to be</span> a rocket
scientist or an Olympic swimmer. But for this short time she's just a
silly, stubborn, affectionate toddler who will make mistakes, test my
patience endlessly, & learn who she wants to be as she grows<span style="font-size: small;">..</span>with my help

A handful of snow peas, chopped into 1/2" pieces</div>

A chunk (as big or small as you desire) cow's milk Feta in water (I get mine at Whole Foods, it is milder than the crumbles or dry chunks I have found in the past at Trader Joe's)</div>

2 Mandarin oranges, peeled and separated</div>

1/4c. roasted and salted Sunflower kernels/seeds</div>

I have never been more affected by watching a video. By the time it was over, I had tears streaming down my face & goosebumps running along my arms as I completely connected with every image on the screen. It explains my need to read every label, the reasons I have concerns over the ingredients in everything that goes in my daughter's mouth, or on her skin (not to mention injected into her muscle tissue!) It is not the same world be are living in, and our kids are getting sicker and sicker. Something needs to change, NOW.<br />

My Mom brought over some super yummy biscotti the other day (which my daughter has demanded every morning since: "Scotti, Mommy!") so I decided to try my hand at it, although I am not much for baking. They were just too tasty and went too well with my morning coffee not to try to make a batch. So I found a bunch of recipes online and doctored up my own with what I had in my kitchen.<br />

First, cream your butter and sugar together in a mixer. Add your vanilla and eggs, one by one, into the running mixer. In another bowl, blend your flour, baking powder, and salt. Next time I'd like to use half all-purpose flour and half whole wheat flour just to get a little finer texture to the dough (though I didn't have any all-purpose so I used all w.w. and enjoyed them just the same).<br />

Shape the dough into two logs and transfer to a greased baking sheet lined with tinfoil. I've recently made an oil spray out of grapeseed oil with a little water and it's been working very nicely.<br />

Bake at 300 degrees until lightly browned, about 30 minutes. Remove to a wire rack and let cool 15 minutes. Transfer to a cutting board and slice each log into 1/2" slices using a serrated knife. Raise the oven temp to 325, arrange back onto cookie sheet, and bake another 15-20 minutes, flipping once halfway though baking. Transfer to wire rack to cool.<br />

As Fall is quickly approaching, my taste buds have had a hankering for the ever delicious vegetable known as butternut squash. It's still too warm here to make soup, so I thought a pasta dish could work. I've always found sage to be a perfect herb to complement squash, and I love the mild flavor and creamy texture of ricotta cheese. A manicotti was born.<br />

I started by preheating my oven to 350. I lightly buttered an 8x8 glass baking dish. Then, salted my water, added a few drops of coconut oil, and brought it to a boil. Added my noodles and boiled them for 7 minutes, as the box directed. Using tongs, I removed the noodles and set them aside.<br />

In a separate saucepan, heat butter over medium and cook the onions and garlic until soft, but not browned, about 5 minutes. Add to the squash, along with the chopped sage leaves, 2T. milk, nutmeg, sea salt, and black pepper. I then used the flat part of my meat mallet to mash everything together.<br />

I grabbed another small bowl and combined my ricotta with 1/4 c. milk and the parmesan. Seasoned it with sea salt and black pepper. Then I went back to my squash mixture and stuffed it into the mancotti noodles with a teaspoon, and found that it was somewhat easy that way.<br />

This tool came from Crate and Barrel, and I love it. Just put the lid on after grating for easy storage. Stays fresh for...well, we eat so much cheese around here it's gone before it would ever go bad, so I have no idea.<br />

That last sentence really got me.<br />
Of course I want my daughter to have fun and meet friends, and enjoy being a child with her peers. But why does that have to include her education? I'd much rather my child be able to learn one-on-one from an adult who has the knowledge, life experience, and patience to take the time to help her if she gets confused or has a hard time, without twenty five other kids in the room causing distractions....at least until she's a teenager. I'm still not sure I want her to miss out on the junior high ice cream socials or high school dances. I started with Charlotte's favorite full-fat Greek yogurt from Trager Joe's. Then added frozen strawberries, ( I have found when preparing smoothies, I prefer using frozen berries versus fresh; they allow the smoothie to stay cold without having to add extra ice.) For a veggie I used kale, which I've just recently become a huge fan of. High in vitamins A and C, it's also a great source of fiber. Also added some coconut oil because it's my most favorite product in the world, honey to add a little sweetness, and the juice from a clementine orange. Blended it all up with my Cuisinart Smart stick, and handed it off to my daughter who happily sucked it down.<br />

I had no idea the vegetable oils used in most crackers turn rancid and require processing to make them taste edible. That really bothers me! Why can't they just use butter, or an oil like coconut, that can withstand high temperatures? I suppose it's because simple, pure butter-based crackers aren't meant to be packaged and put in a box to sit on shelves for months. The preservatives are there for a reason, I just hate having to injest them. And the yeast extract the bunnies contain? Another fancy word for Monosodium Glutamate, the flavor enhancer that tricks our brain into craving more of the same..is there any boxed or canned product out there that doesn't contain a form of free glutamic acid?? So I concocted my own version of a cheddar bunny, without all the added junk.</div>

1 lb. chunk of the sharpest cheddar cheese you can find, shredded or cut into small chunks. (I prefer to shred cheese myself, since learning the pre-shredded kind contains the anti-caking agent cellulose, a form of wood fiber! Eww.)</div>

Preheat your oven to 350 degrees. Put all ingredients besides the water into your food processor. Combine until mixture resembles coarse sand. Add each tablespoon of water seperately, pulsing between each to combine. I dumped the contents of my Cuisinart onto my wax paper-covered countertop, and smushed it all together to form a log. I then wrapped it up and chilled it for a half hour. After that, I placed it back on the wax paper and carefully rolled it out to about 1/4" thickness. I had a flower shaped cookie cutter from my daughter's first birthday party (it was a springtime garden theme) that I used to cut out the shapes for the crackers<span style="color: cyan;"><span style="color: white;">.</span><span style="background-color: #444444;"><span style="background-color: orange; color: white;"> NOTE</span>:</span></span> On some of them I sliced the petals apart so they almost looked like little fish. I recommend doing that to all of them; the ones I left as whole flowers turned out too big. The amount of baking time is accurate for doing so- 25 minutes on wax paper-covered cookie sheets. When they were done baking, I tranferred the crackers to a wire rack to cool before storing them in a paper bag. The crispier the cracker gets without burning it, the more flavorful it is. I like the way the smaller "petal" crackers bake up versus the whole flower cracker, the bigger ones could have used another five minutes or so in the oven. </div>

<span style="background-color: white; color: #f1c232;">The fact that I purchased a helium tank without actually needing one to make the banner was slightly annoying, and some of the balloons that came free with the tank ended up being differently colored than they looked before inflation...next time I make a banner, my lungs can do the job of filling the balloons and I'll choose the balloon colors myself. I used about 40 balloons to make this one. So my perfectly colored rainbow balloon banner (ya know, ROYGBIV) wasn't the color scheme I had pictured, but it was still pretty cute. (My adorable grandparents and Dad's head also happen to be included in the pic) . </span><br />

I'd been wanting to wait until mid-week to hit up our local TJ's for a grocery run, so on Monday I browsed thru the freezer, fridge, and cupcoard for ideas on what to make for dinner. Besides having had a rough weekend and still being exhausted, Spence was working late so it was just munchkin and I. After realizing the sparcity that was my shelves, I decided to use up the leftover grilled chicken and cooked radiatore to create a phenomenal pasta salad.</span></div>

<span style="background-color: #fce5cd;">First, I made my dressing. I never purchase salad dressing, EVER. Not only is it the most simple thing to make, but after I read on the label of Hidden Valley Ranch that it contains msg, (amongst many other preservatives) I vowed to never again buy a bottle. I keep a jar of oil & vinegar blended with spices (fresh garlic, dried oregano, dried basil, black pepper, sea salt) in my fridge and use it all the time for various dishes. For this salad, I started by pouring about a 1/3c. of my O&V over my cold radiatore. I also made a quarter cup of buttermilk (by adding a tablespoon of fresh lemon juice to whole milk) and threw that in as well. My pasta had been kind of stuck together from the cooled garlic butter sauce but after a brisk stirring, it separated nicely. I then chopped up my grilled chicken and tossed that in. Now for the veggies- a few celery stalks, a couple carrots, half a red bell pepper, and half a yellow bell pepper, chopped into bite-sized pieces. Almost an entire can (all but a small handful) of black olives, chopped. Combine the veggies with the pasta and chicken. Now my most favorite pasta salad in the world is made by my aunt, whose secret ingredient I learned a few years back. A spice blend by McCormack called Salad Supreme. I didn't know exactly what was in it, but I was confidant that I could concoct a spice mix just as satisfying to the tastebuds. A sprinkling of onion powder, paprika, sesame & poppy seeds, red pepper, and a half cup of grated parmesan cheese, and a tasty imposter was conceived. After blending all that in, I threw in a few fresh basil leaves from my herb garden and we produced an ultimately tempting treat for the pasta salad lover.</span></div>

There is a website where you can make purchases, or you can throw a party and get product for free or half price. The merchandise ranges from totes to travel bags to purses to accessories. Every product comes in a few different fabrics, and almost everything can be mongrammed. I adore the organizational systems and the way the catalogue shows unique ways to use each product. I also love how all the fabrics coincide with eachother, and when they dis-continue fabrics for changing seasons, they always come back around. This is a thermal tote- It's great now for picnics, if I bring us lunch at the zoo, I've even served beers/water bottles in it at parties. Now the inside isn't completely waterproof, (they classify it as water-resistant) so I put the ice cubes in a couple of plastic gallon bags and then arranged it around the bottles.<br />

This here is the hang-up home organizer. I LOVE THIS! My husband and I both own small businesses and our home is overrun with receipts, bills, junk mail, and coupons. (amongst the nails, screws, carpentry pencils, spare change, and other randomness I find hanging around from my lovely other half) I cannot stand these papers piling up on my countertop where I need all the space I can get for storing all my spices, baking needs, and cooking neccessities! This thing is a gift from God. It just makes it so much easier to keep us organized. If I find one of Spencer's random receipts, I now know where to put it, and he knows where to find them. I have a slot for our garbage stickers, stamps, directories, even sunglasses! Now we just have to keep <strong>it </strong>from getting cluttered.<br />

At this time of the year, the oil is still pretty solid (it begins to melt at 76 degrees) so I just used a spoon to get some out of the jar, rubbed it between my hands to melt it, and rubbed it under my arms. At the end of the day, I was still fresh and odor-free! I LOVE coconut oil for so many things. I keep a jar on Charlotte's changing table to use on her skin; for any rash or irritation, the stuff works like a dream! I just recently began using it more in cooking, due to it's heat stability it's great for frying. Last week I tried filling a glass measuring cup with straight white vinegar. placed it on the top rack, and ran a cycle with the hottest water available, hoping it would de-gunk whatever was preventing the machine from working. I saw this pinned on Pinterest, though I'll have to delete it since it DID NOT WORK. Well then I heard from a friend of mine that she had made a natural type of dishwashing detergent and uses vinegar as the rinse agent (like where you'd put your "jet dry.") I tried this, and voila! Streak-free, clean dishes for the first time in months. Straight white vinegar did the trick. We decided to invite family at an earlier time, and then include our annual Memorial Day party with friends later on in the day. I went with a "hot air balloon" theme and a rainbow color scheme. Created the invitations on Microsoft Publisher and printed them out at home, so easy! Can't wait until it all comes together.</span><br />

We are not yet vegans, but I am hearing more and more how animal products are just not necessary in a healthy diet. This movie claims that most of the diseases that afflict us can be controlled or even reversed by rejecting all animal based and processed foods. Processed foods, no problem. We're pretty much there...but I looovve my cheese, yogurt, sour cream..well, any kind of cream, OMG what would I do if I started the FOK diet?!? Gotta see this DVD to find out-</span><br />

I've always wondered silently if there was a way we could know exactly where the meat we were eating came from, and after doing some web surfing I found a family owned farm in Iowa. The name is called Wallace Farms, and they have a Naperville Farm club that I was able to join with a drop off just minutes from my house. Such an amazing group of people working together to produce quality meat and seafood!! So I placed an order for a sample package that included <span style="font-family: Georgia, "Times New Roman", serif;">one Ribeye or New York Strip, one Top Sirloin, a Ranch or Eye, a Roast, & three lbs of Ground Beef. I also ordered some delicious, nitrate-free sausage made with spinach & feta cheese, & some italian sausage links. </span></span></span><span style="font-family: Georgia, "Times New Roman", serif;"><a href="http://www.wallacefarms.com/" target="_blank"><span style="background-color: #eeeeee;">www.wallacefarms.com</span></a></span><br />

<span style="background-color: #eeeeee;"><span style="font-family: Georgia, "Times New Roman", serif;">Last night I had scheduled myself a client around dinner time, so I figured a crockpot meal could feed Spencer & Charli while I was busy. I decided to try a potroast with the roast from the sampler. I threw some small yellow onions, a couple large carrots, three whole potatoes, and a few stalks of celery into the bottom of my crockpot. I then seared my roast (which was seasoned with ground black pepper and sea salt) on a very hot skillet to brown all sides. After searing it, I plopped it on top of the veggies and sprinkled five or six crushed garlic cloves (the more garlic, the better! SO good for you!) over it. I opened a small can of plain tomato sauce, and poured that over the top. Then I filled the crockpot about halfway with msg-free beef broth. Sprinkled a little ground sage, more sea salt, pepper, & a couple sprigs of fresh rosemary in before I closed the lid and let it simmer gently for about 6 hours. </span></span><br />
<span style="background-color: #eeeeee; font-family: Georgia;">Let me tell you, the meat was the leanest I've ever eaten in regards to potroast. It wasn't dry (where it almost sticks to your teeth when you're chewing it) and had a lovely flavor. And just knowing I fed my daughter meat that was not pumped full of chemicals made it taste even better. Now, unfortunately the crockpot was still set on warm when I had gotten back up into the kitchen from working, and it could have easily been shut it off completely an hour earlier. Crockpot meals seem to stay hot forever! That could be the reason it was ridiculously steaming hot for a good ten minutes before I could take a bite without fear of scalding my mouth!
